I'm the son of Portuguese immigrant parents
and a native of California and the San Francisco Bay Area. While
having spent the early part of my childhood on the island of
Faial in the Azores, Portugal, where my father operated two
family owned restaurants, the later part was spent growing up
in a Latino neighborhood in San Jose, CA. I became intrigued
with Mexican culture and then enthralled by the sights, smells
and flavors of Mexican food. My love of Mexican food developed
while scouring the open-air stalls and vendors of the local
flea markets—frequenting the taquerias, carnicerias and
the Mexican super mercados in my neighborhood. During the meals
I had the honor of sharing with co-workers and their families
my passion for Mexican food and ingredients escalated. I carried
this enthusiasm through my formal training in culinary school
and developed my skills in professional kitchens in Sonoma and
Monterey at renown La Salette and Montrio restaurants.
